We make marmalade from the thick-skinned, juicy, ripe fruits of our various types of orange trees, such as jaffa, navel , hamlin and honeybells. After grating the sour part of the outer peel, we boil the oranges whole in plenty of water, drain the bitter water and extract the puree. We make marmalade by mixing it with white grape must.
