We make jam from the thick-skinned, juicy, ripe fruits of our various types of orange trees, such as jaffa, navel , hamlin and honeybells. We boil the oranges whole in plenty of water, after grating off the sour part of the outer peel, drain the sour water, then cut them into thin slices with thin fruit, put them in sugar and make jam.

You can serve this special citrus-scented orange jam with toast and butter for breakfast with your family, but you can also serve it to your guests on biscuits with tea and coffee, or you can put it on sweet curd cheese after dinner. You can use the seeds as a vol-au-vent filling or to enrich your tarts and cakes. You can mix the syrup with yogurt, add some water and ice to make a delightful refreshing orangeade, or blend the syrup with sweet curd and turn the puree into a multi-purpose culinary delight.
